This research was carried out under Samsun ecological conditions during the 1993-1994 growing season to determine the effects on quality traits of nitrogen and herbicide applications at different periods of plant development on quality traits in bread wheat. Based on the results, it could be concluded that there are statistical differences among the nitrogen and herbicide treatments in different time in terms of protein and wet gluten content in both cultivars that is Cumhuriyet-75 and Bezostaja-L However, relatively protein and gluten increases were observed by applying the nitrogen in three different times. There were no statistical differences as to protein between varieties and the applications of herbicide in post and pre-emergences in terms of the gluten content. However, these traits have given statistically different results by applying nitrogen in two or there part at different development stages of wheat.en_US
