Samsun' da ekmek fırıncılığının durumu ve sorunları

Abstract

Bu çalışma Samsun, ilinde faaliyet gösteren fırınların genel durumlarını ve soranlarını belirlemek amacıyla yapılmıştır. Toplam 103 fırına kullandıkları hammaddeler, ekmek yapım işlemleri, fırın fiziksel şartları ve çalışanları ile ilgili toplam 50 sora sorulmuştur. Sonuç olarak Samsun'da ekmek üretiminin büyük bir kısmının çok basit bir teknolojiye dayanan küçük ünitelerde yapıldığı, işletmelerin çoğunun fiziksel şartlarının üretim için uygun ve yeterli olmadığı saptanmıştır. Ayrıca kalitesiz hammadde kullanımı, eğitimsiz işçi, yetersiz bilgi ve teknoloji gibi sebeplerle istenen kalite ve standartta ekmek üretilemediği belirlenmiştir.

The aim of this study is to determine the overall conditions and problems of bakeries operating in the province of Samsun. A total of fifty questions about ingredients, bread making practices, physical conditions of bakeries, and their personnel statues were asked to 103 bakeries. In conclusion, it was determined that most of the bread making techniques based on simple procedures and had a small scale, the physical conditions of most of the bakeries for production were not satisfactory and did not meet the standards. In addition, it was found that the bread with desirable quality and standard could not be produced because of the utilization of poor quality of ingredients, uneducated workers, insufficient information and technology.
